Hi - I would like to give access to the jigoshop side of the site without allowing access to the rest of the site administration. Any ideas how this is possible? Perhaps a jigoshop admin role could be created for this purpose?

Yes, you could use a plugin to allow them admin rights on only Jigoshop related material. Why though?

I built the site for the company but I don't manage it myself. They manage their own content and others in the company manage and process orders.

Okay. You could use something like Advanced Role Editor to make a new user type, maybe jigos, and then make it so that jigos can only do Jigoshop stuff.
